Nothin funny or really memorable here - just a recipe for a salad I made up on the fly, that Zoe devoured ... so I thought I should write it down in a place where it won't get lost.
- green beans - the teeny, tiny baby haricot vert (I used frozen ones, shhh, don't tell)
- marinated roasted red pepper / capsicum (from the counter at Woolie's), sliced
- kalamatas, sliced
- cannellini beans (about 1/2 a tin)
- feta, in little cubes
- garlic
- white balsamic (so the feta doesn't get that gross gray colour)
- olive oil
- salt & pepper
Toss it all together and yum! Will have the rest tomorrow for my lunch salad - with rocket, baby spinach and shredded chicken.
